Sprinkle Cake w/ Chocolate Kahlua Frosting: A Birthday Cake For Sebastian <3

A couple of weeks ago we celebrated Sebastian’s birthday! It was everything that a birthday should be (although that is from my perspective.. better ask him if he agrees). We slept in, had presents in bed plus a few good heartfelt words and tears (you know you did it right if they cry from your verbal birthday card), had brunch with friends, cake in the afternoon, dinner with my mom, and a crazy movie at an awesome cinema. It was a perfect day celebrating the person I love and most want to spend my time with.

It is especially during the summer when I appreciate these long days spent together. Sebastian works so many hours a week and often until 9pm that I don’t get to see him much during the day. It is special to have these bright sparks of time splayed out, long hot days to laze around in our underwear, order pizza, and watch Gilmore Girls. It is beautiful how those small moments add up to create such larger meaning and connection. Just to be content together means the world to me.

To get appropriately cheesy here, I wanted to share a story. Two years ago, just about a month before I first met Sebastian, I was out for dinner celebrating my birthday with my mom. I remember staring mournfully into my lemon ginger twist cocktail (that I was about 2 days away from being legally allowed to drink) and telling my mom something along the lines of “I am a robot who will never ever be able to find and love somebody”. Of course she reassured me that I was being silly and that sooner or later I would meet someone, but I honestly and truly did not believe that. I wasn’t too sad about it, I just considered it an unfortunate absence not-soon-to-be-filled in my life. Fast forward one year: I am sitting in the exact same restaurant (probably staring into the exact same cocktail) sitting beside Sebastian and across from my mom and my brother. So, that is all to say I guess I am not a robot, or maybe Sebastian is just my perfect robot match.

This cake. I was initially inspired by Molly Yeh’s amazing funfetti cake. Now, don’t go comparing these two cakes because:

1. Molly Yeh is a cake making master

2. This cake is actually very different from her cake

However, I did want to mention that the basic sentiment of the cake came from her, as well as the sprinkles and the clear imitation vanilla (genius).

This cake is moist, sweet, delightfully sprinkley and delectably delicious (is that redundant?). It is a perfect go-to easy peasy birthday cake. Simple and classic is the way to go my friends. This is a really good tutorial on how to properly crumb coat a cake. It seems time consuming but I promise the end result is worth it. Side note: I bought a cake turntable from the dollarstore and it works perfectly!

Sprinkle Cake w/ Chocolate Kahlua Frosting

Makes an 8 inch 2 layer cake

Ingredients

Cake

  • 2 cups almondmilk + 2 tbsp apple cider vinegar
  • 1/2 cup coconut oil
  • 1/4 cup sunflower oil
  • 2 tbsp clear imitation vanilla
  • 1 1/2 cups cane sugar
  • 3 1/2 cups flour (either use entirely unbleached all purpose flour, or do half all purpose and half spelt flour)
  • 2 tbsp arrowroot powder
  • 2 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp salt
  • 1/2 – 3/4 cup sprinkles

Icing

  • 4 cups icing sugar
  • 1/2 cup cocoa powder
  • 3 tbsp kahlua
  • 1 tbsp clear imitation vanilla
  • 1 cup vegan butter (like earth balance), softened

Notes

Preheat the oven to 350 and grease two 8 inch round cake pans.

Mix together almondmilk and apple cider vinegar in a medium mixing bowl and set aside until foamy. In the meantime combine flour, arrowroot powder, baking soda, baking powder, and salt in a small mixing bowl and set aside. Add in the coconut oil, sunflower oil, vanilla, and sugar to the almondmilk mixture. Mix well until combine. Mix the dry ingredients into the wet ingredients and combine using a spatula or wooden spoon. Once fully combined add in the sprinkles and distribute evenly between cake pans. Sprinkle extra sprinkles into the batter of each pan.

Bake cakes for 25 – 30 minutes, or until a toothpick comes out clean from the middle of the cake. Let cool completely in pans.

While the cakes or cooling make the frosting. Combine vegan butter and vanilla in either the bowl of an electric mixer, or in a regular bowl and beat with handheld electric beaters. Beat until fluffy and slowly add in the icing sugar 1 cup at a time. Add in the cocoa powder and kahlua and mix until fluffy.

Frost cake generously between the layers and over the top and sides (use this tutorial to help with the frosting). Add your birthday candles, light, slice, and enjoy! 🙂
