I have this list on my phone, you know, under the 'notes' app. It's been going strong for about a year now on this particular phone, but before that it was on my old phone, and on the one before that (I lost a couple okay?). The list is called 'remember' and it chronicles all of those little thoughts, tiny moments and words I never want to forget. I started the list because ever since I can remember I do all of my creative thinking at night. It usually happens in those moments right before sleep when my mind is slowing down and I can no longer keep my eyes open. I think of something, a word or phrase that I want to use in a piece of writing, or an idea for an art project. Or, more recently, ideas for recipes. I always have this moment of struggle between preservation of an idea and sleep. That's why I don't write it down in a notebook, too much effort for a sleepy brain. I can usually muster up just enough energy to grab my phone and type a few blurry sentences together. On those nights when sleep does win though, I rarely remember the idea in the morning. Often, I don't use the fragments I write down at all and they sit in this scrambled up list of ideas forever and ever. Sometimes though, when I'm really stuck, I'll look to it for inspiration and find that something I had completely disregarded earlier prompts me into action.
Now, you may think this all has to do with ice cream, and I could probably find a sneaky way to connect it all, but truthfully this ice cream was a daytime creation. My nighttime musings can actually be very frustrating and result in me laying in bed for hours unable to sleep because I am so consumed by an idea. This ice cream though? Nope. I knew exactly what I wanted it to be from the beginning.
The reason that it is 'super ontario' is because it is made from 100% pure ontario maple syrup and fresh ontario strawberries. It is not too sweet, but just the perfect amount of mapley goodness. I used the base of the ice cream from the kitchn's tutorial on ' how to make dairy free ice cream'. It is super awesome and extremely delicious. Try it out!
Super Ontario 'Strawberry - Maple - Mint' Ice Cream
Ice cream base adapted from the kitchn
- 2 (13- to 15-ounce) cans full-fat coconut milk
- 1/2 cup maple syrup
- 1/4 teaspoon salt
- 2 tablespoons arrowroot powder
- 1 1/2 teaspoons vanilla extract
- 1 cup fresh strawberries sliced
- 1/2 cup fresh mint leaves roughly chopped

My only change is that while heating up the coconut milk, maple syrup, and arrowroot powder I added in the mint leaves so that the flavour could be extracted and absorbed into the milk.
