My days lately have been long and busy, exactly the way I want them to be. I like to think that I somewhat know my own preferences at this point, and keeping busy with a semi-structured schedule is something that makes me happy. It is funny to think how when you are the busiest, all you crave is the freedom to sit back and watch endless episodes of TV or read away the afternoon. However, I often find that when I am given that leisure time I quickly grow tired of it. Not so much the ability to consume as much narrative and media as I want, but more that the satisfaction of that leisure time lessens when it is so readily available.
Today I woke up early and shot two posts for the blog, went to a meeting for this super awesome journal that I work on at school, and then went to work for 8 hours. I've only just gotten home and after consuming two peanut butter toasts and part of an apricot beer, I still feel energetic!
The other night Sebastian and I watched Kiki's Delivery Service. It was his first time seeing it, but probably my 10,000th time. I'd forgotten how many memories it brought back, or how well I would remember it, but almost every word spoken felt like an old friend whispering in my ear. I wasn't allowed to watch TV as a kid (we never had cable anyways) so watching movies on the weekend felt like a special treat. Kiki's Delivery Service was always a favourite. I used to long to be a part of this scene - when Kiki and Ursula sleep over at Ursula's cabin and talk about art and magic and drink hot cocoa. I aspired to be both of them; an artist and a witch. I still do :)
Anyways, here is a salad for busy days. It is super quick to make and full of delicious flavours and filling ingredients. I love adding hummus to my salad because it adds this extra layer of creaminess as well as making me more full. The apple adds crispness and crunch, and the seeds some healthy fat as well as texture and flavour. Throw this together on a busy day to make sure you get in some veg! <3
za'atar spiced kale salad w/ hummus + apple
Serves 1 or can easily be shared between 2
The toppings are all approximations - If you LOVE dried cranberries, add more! If you prefer more sunflower seeds and less apple, go for it! This salad is very easy to customize.
- 4 - 5 stalks kale (apprx. 2 packed cups), washed and ripped
- juice of 1 lemon
- 1 tbsp olive oil
- 1/4 tsp salt
- 1/4 cup hummus (I used this one)
- 1 apple, cut into small pieces
- 1 tbsp sunflower seeds
- 1 tbsp pumpkin seeds
- 1 tbsp dried cranberries
- 2 tsp za'atar
- 1 tsp chia seeds
Massage the kale in a large bowl with lemon juice, olive oil, and salt. This should take 3 - 5 minutes and the kale will become limp and soft. Add the kale to your serving bowl and top with a scoop of hummus, apple slices, sunflower seeds, pumpkin seeds, dried cranberries, za'atar, and chia seeds. Enjoy fresh!
